I had so many friends and family asking for recipes when I would post the evenings "meal" on facebook. I decided to start a website where I could keep a collection of these recipes and share them with everyone!! I hope you enjoy!!

Crawfish Cornbread
Ingredients:
3 lbs crawfish tails
1/2 cup margarine
1 1/2 tsp. baking powder
3 tsp. salt
3 cups milk
2 cups chopped onions
3 boxes Jiffy Cornbread mix
1 1/2 tsp. baking soda
6 eggs
1 1/2 lbs jalapeno cheese, shredded
Directions:
Saute' crawfish and onions in butter. In a bowl, combine cornbread mix, baking soda, baking powder, salt, eggs, then add milk. Add saute' mix and shredded cheese. Pour in a greased 10" dutch oven or large iron skillet. Bake at 350 degrees for 45 minutes.
