Ingredients:
2 to 3 lbs of ground beef, cooked & drained
1/2 yellow onion, chopped
1/2 bell pepper, chopped
3-4 cups chicken broth
2 cans light red kidney beans, not drained
1 can ranch style beans
2 (8oz) can tomato sauce
2 (14.5oz) cans stewed tomatoes, broken up
2-4 tbsp. chili powder (or to taste)
1/2 tsp. cumin
1/2-1 tbsp. minced garlic
**Optional: pinch of red pepper flakes and/or cayenne pepper to spice it up a bit :)
Directions:
In 5 quart pot, brown ground beef, just before done, add the onion & bell pepper and cook until meat is no longer pink. Drain well. To pot, add broth, beans, tomato sauce, and tomatoes. Add seasonings. (You can also a touch more chicken broth if necessary). Let this simmer on medium heat for at least 30 minutes. Serve over white rice or Fritos chips. Top with chopped onion, peppers, cheese or sour cream...whatever you like!!
**You can also put this in the crockpot. Follow same directions. Add ingredients to crockpot & add browned ground beef. Cook on LOW for about 4-6 hours.
**This dish is also great left over and it also freezes well!!
