
Ingredients:
4 large baking potatoes, peeled
1 1/2oz cream cheese, softened
1/2 cup sour cream
1/2 tsp onion powder
1/2 tsp garlic salt
1/4 tsp black pepper
1/2 cup shredded cheddar cheese
2 tbsp. chopped fresh chives
1 small tomato, thinly sliced (optional)
Directions:
Peel & coarsely chop potatoes. Boil in medium sauce pan with enough water to cover potatoes. Cook over medium-high until tender; about 15 minutes. Drain & mash (or use electric mixer)
Preheat oven to 350F. Add cream cheese & sour cream to saucepan. Whip potatoes with a wire whisk or mixer until well mixed. Mix in onion, salt, garlic salt & pepper. Spoon potato mixture into baking dish. Sprinkle with cheddar cheese. Bake for 20 minutes. This step is optional: Arrange tomato slices on top of casserole. Sprinkle with chives. Bake for an additional 5 minutes.
