Ingredients:
2 Chicken breasts
3-4 stalks of celery
1/2 yellow onion
2 cups rice
1 can cream of chicken soup
1 can Campbell's "Fiesta Nacho Cheese" soup
Salt & Pepper
Directions:
Bring about 6 cups of water to a boil. Add chicken, salt, pepper, chopped onion & celery. Boil until chicken is done. Remove chicken & let cool. Add rice to remaining water; stir often. When rice is done, most of the liquid should have cooked out. Shred chicken; add back to rice. Add cans of cream of chicken soup & fiesta nacho cheese. Turn of burner & let rest for a bit. You can add just a pinch of Tony's also if desired (I think I put Tony's in everything, lol).
*Note: if the mixture gets too thick, you can add just a little bit of milk to loosen it back up*
