This recipe is also a very old family recipe. My kids love it!
This recipe I make for the 4 of us. You can increase the recipe, just remember to adjust salt, and the the flour is always 1/2 as much as the cornmeal used.
(ie: 1/2 cup flour to 1 cup cornmeal, or 1 cup flour to 2 cups cornmeal...you get the picture) ;)
Ingredients:
1 cup cornmeal
1/2 cup all purpose flour
1 tsp salt
Directions:
Boil about 3 to 4 cups of water. Mix dry ingredients together well in medium size bowl. After water has boiled add small amounts of water slowly to dry ingredients and mix well...you want the consistancy to be pasty (like that of peanut butter).
Heat in large skillet about an inch to 2 inches of vegetable oil (or you can use a fry daddy if you have one).
Once you have reached the desired consistancy & oil is hot... (***NOTE: this next step is important, because mix is super hot and will burn you and will stick to your hands if you skip this step!)....using COLD water (either from faucet or from another bowl you have set aside) ...rinse your hands in the COLD water, then spoon tablespoon of mix into your hand and press down once, slightly (do not overwork this...it will begin to stick to your hands).... Place slighty pressed patty GENTLY into hot oil. Rinse hands in COLD water again and repeat. Do not add to many pieces at once or they will stick together. Once patties float and turn golden brown, then remove from oil. (you may have to flip them once)... Place patties on plate lined with paper towels...top with small pat of butter.
